After my introduction to baking with my mother as a young child, I discovered a passion I never knew I had. Then, when I had kids, introducing them to the same thing and making birthday cakes for them led me to look into the fundamentals of running a bakery. I learned first-hand about the dynamics of dough proofing, scheduling baking routines, and meeting customer demands. The more I learned, the more I was able to appreciate the commercial production of baked goods.
